Balloon potatoes

Ingredients

4 m.-sized potato(s)
Salt
Pepper, freshly ground
possibly butter or olive oil
Herbs of your choice

Rub the potatoes well under water (with your hand or brush) and cut them in half lengthwise. Place the potato halves, cut side up, on a baking sheet. Sprinkle the cut surfaces thinly but evenly with salt right up to the edge (it’s best to use a small table salt shaker).

Bake in a preheated oven at 200°C for approx. 25-35 minutes. After the salt dissolves, a kind of skin forms, which later puffs up. If the skin is slightly brown and bulging, the potatoes need about 5 minutes more!
Now you can brush the potatoes with a little olive oil and sprinkle marjoram or rosemary or similar over them if you like. Personally, though, I just like them with freshly ground pepper and a little butter.

Very simple but surprisingly tasty side dish for grilled meat, steaks or roasts. It’s also probably the healthiest way to prepare potatoes (without butter, of course), as the skin is still on, no fat is used and no ingredients are removed because the potatoes don’t go into the water.
