Fresh ripe tomatoes

Storage jars with lids
Preparation :
- Start by washing fresh tomatoes thoroughly.
- Scald the storage jars and their lids to sterilize them.
- Remove the stems from the tomatoes and make a small cross cut on the underside of each tomato.
- Immerse the tomatoes in a pot of boiling water for about 1 to 2 minutes, then immediately drain them and immerse them in a container of ice water to stop the cooking.
- Once the tomatoes have cooled, remove their skins starting from the cross cut you made previously.
- Cut the tomatoes into quarters or dice, depending on your preference.
- Fill the storage jars with the tomato pieces, packing them lightly.
- Add a pinch of salt to the tomatoes in each jar.
- Close the jars tightly with their lids.
- Place the jars in a large pot of boiling water, making sure they are completely covered with water.
- Boil the jars for about 15 minutes to ensure preservation.
- Remove the jars from the saucepan and let them cool completely to room temperature.
- Check that the lids are tightly sealed before storing canned tomatoes in a cool, dark place.
You can therefore enjoy your canned fresh tomatoes all year round to prepare sauces, soups or other tasty dishes. Enjoy your food !
