Recipe explained step by step – Fluffy Croissants with ham and cheese – To prepare this recipe you need:

Ingredients needed:

  • 500 g of flour
  • 25 g fresh yeast
  • 125 ml yogurt
  • 125 ml of milk
  • 1 spoon of sugar
  • 1 teaspoon salt
  • 2 eggs
  • 80 g of butter
  • a little bit of oil
  • 1 egg
  • 12-13 thin slices of cheese
  • 12-13 thin slices of ham
  • sesame
  • Mac

Method of preparation:

In a bowl, add the yeast, 50 ml of warm milk and 3 tablespoons of flour. Mix gently until homogenized (it should have the consistency of cream), then leave in a warm place for 10 minutes or until it rises.

After the composition has risen, we add the flour, eggs, salt, sugar and, gradually, the milk with the yogurt; mix well until homogenized.

We put the dough on the table, grease our hands with flour or oil and knead for 10 minutes, until it becomes elastic and non-sticky. Divide into 8 equal balls. Sprinkle the surface with flour and roll out each ball into a sheet of 20-22 cm, so that they are all equal (we use a little butter to spread the dough).

Butter each sheet and divide the butter in such a way that we have enough for 7 sheets. We overlap the sheets as we spread and grease them. We do not grease the last sheet unless it is not elastic enough.

We roll out the pile of overlapped sheets into one large round sheet of 42-43 cm and divide it into 12 equal parts. We put the meat and the cheese, after which we roll from the base.

Leave in a warm place for 30 minutes and another 30 minutes in the refrigerator. Brush them with egg beaten with a little milk, sprinkle sesame and poppy seeds on top. We preheat the oven to 180 degrees and leave them to bake for 15-30 minutes.

Notes:

  • We use a sufficiently spacious tray
  • Preheat the oven to 180 degrees Celsius
  • Yogurt and milk should be slightly warm
  • The butter should be at room temperature
  • If we don’t have a warm enough place, we can heat the oven for 3 minutes, then turn it off and leave the croissant tray to rise
