It is important to keep in mind that lentils are rich in iron and minerals, essential for our body. They are a great option for those who want to lose weight or follow a vegetarian diet.


Vegans can substitute water or a powdered egg substitute for the egg in this recipe.
Ingredients
For the meatballs
- Half a kilo of Lentils
- 1 Carrot
- 1 onion
- 2 eggs
- 1 clove garlic
- 1 Red bell pepper
- Salt and black pepper c/n
- Olive oil c/n
- Oatmeal or breadcrumbs c/n
For the sauce
- Crushed tomato c/n

Preparation
- Put the lentils in a pot with water and let them cook until they are tender. Once done, strain the lentils and put them in a bowl. Puree the cooked lentils until they form a puree and let it rest.
- Chop the onion, sweet pepper and garlic into small cubes and sauté them in a pan. Grate the carrot and add it to the pan for 5 minutes when the onion is transparent.
- When all the vegetables are well cooked, mix them with the lentil puree and add some beaten eggs. Let this mixture cool in the refrigerator for about 20 minutes before forming balls that you can then roll in breadcrumbs.
- To prepare the sauce, dice the sweet pepper, garlic and onion and sauté together in a medium or large saucepan until translucent, before adding the tomato puree along with other seasonings (for example: broth, oregano, Provençal spices, chili powder, salt, sugar).
- Bring the sauce to a boil, then add the lentil meatballs and let them cook for 20-25 minutes.
- Once done, remove them from the heat and serve them.
