Ingredients to make stuffed baked potatoes
We are going to calculate one potato per person. So this recipe is for 3 people.
- 3 large potatoes
- Minced beef: 250 g
- 2 or 3 red tomatoes
- 100 g grated cheese
For the minced meat
- 1 egg
- Half an onion
- 1 clove garlic
- 1 small teaspoon of Curry
- 1 pinch of ground cinnamon
- Salt to taste
- Ground black pepper to taste
- Half a tablespoon of olive oil
For the tomato
- Salt to taste
- Ground black pepper to taste
- 1 small teaspoon of ground dried basil
- Half a tablespoon of olive oil
Procedure
- Preheat the oven to 200ºC.
- We wash the potatoes, cut them in half and make superficial cuts.
- Place them in a microwave-safe container, spray them with oil and cover with plastic wrap.
- Cook them in the microwave for 10 minutes at 800w. Make sure they are tender and let them cool before emptying them.
- In a bowl, combine the minced meat with chopped onion and garlic, egg, salt, pepper, curry, cinnamon and oil. Mix until you obtain a homogeneous consistency and set aside.
- Cut the tomatoes into small cubes, place them in a bowl and add salt, pepper, ground dried basil and oil. Mix and reserve.
- Empty the potatoes carefully, leaving a little pulp. Add about a tablespoon of pulp to the bowl with the minced meat and mix.
- Sprinkle salt over each potato, add grated cheese and fill generously with the meat mixture.
- Place the dish in the preheated oven and bake for 20 minutes. In the last 2-3 minutes, activate the grill to brown and melt the cheese.
Remove from the oven, let rest and serve.
