How to make the potato roll stuffed with courgettes with ham and cheese?
Boil the potatoes for 30/40 minutes. As soon as they have cooled, peel them and mash them in the potato masher.
In the meantime, cut the courgettes into thin slices. Cook them in a pan with a drizzle of oil for 10 minutes over low heat. If necessary add a drop of water.
Add the eggs, cheese, salt, pepper, butter cut into pieces and parsley to the potatoes. Knead first with the fork then with your hands. After obtaining a firm and homogeneous mixture, brush a sheet of baking paper with a drizzle of oil. Pour the potato mixture and mash it with your hands, trying to form a rectangle. Stuff with a layer of courgettes, then cooked ham and finally sliced mozzarella.
Roll it out starting from the narrowest part and using the baking paper. Seal the edges well. Cover the roll with breadcrumbs and wrap it in baking paper. Place it on a baking tray. Bake in a hot oven at 180 degrees for 30 minutes.
Let the potato roll filled with courgettes with ham and cheese cool before cutting it into slices and serving it.
