
Every year at Christmas dinner there are inevitable garnishes that are served to complement the turkey.
Ingredients:
3 or 4 white potatoes.
2 carrots.
160 grams of peas.
300 grams of English ham, preferably unlaminated.
2 peaches.
1 teaspoon baking soda.
350 grams of pineapple.
150 grams of pecans.
180 grams of mayonnaise.
2 lemons.
chopped parsley to taste.
salt to taste.
Preparation:
Start by washing and peeling the potatoes. To prevent them from darkening, immerse them in a bowl with cold water and then cut them into slices approximately one finger thick and into sticks and finally, cut crosswise to obtain medium cubes.
Boil plenty of water in a medium pot and add a good handful of salt. When it comes to a boil, submerge the potatoes and let them cook for 10 minutes or until they are soft. Then, remove them from the water and set aside.
Separately, peel and wash the peas; To wash them, you can soak them in water with a splash of vinegar for 8 minutes and rinse them. Also, wash, peel and cut the carrots into small cubes so that they are the same size as the peas.
Blanch the peas and carrots, you can do it in the same water where you cooked the potatoes. Remember to boil the peas first and, after a couple of minutes, the carrots, as they take longer, then when they are al dente, strain and immediately immerse them in a bowl of ice water to stop the cooking.
Chop the ham into squares approximately the size of the potato and set aside.
Next, wash, peel and chop the fruit. To peel the peaches, bring a pot of water to a boil and add a teaspoon of baking soda. Place the peaches in the water for just 25 seconds, then remove them and place them in a bowl of ice water. We proceed to pull the peel with the tip of a knife.
Then, cut the ends to remove the bone and cut this pulp into cubes the same size as the ham.
For the pineapple, remove the ends, the peel and the hard fibrous trunk in the center or heart.
Cut the pulp into slices and proceed to chop into medium triangles.
Combine all the previously cut ingredients in a large bowl and add the mayonnaise, lemon juice, salt to taste and finely chopped parsley.
Before serving, adjust the seasoning. Now you can enjoy the Christmas fruit salad!
