Ingredients for the beans
- ½ kg of beans.
- 2 ½ liters of water.
- 2 cloves of garlic.
- ½ onion.
- 1 ¼ teaspoon salt.
For the beans you can use whatever you have at your disposal , mainly bay, pinto or Peruvian beans are used.

Ingredients to prepare the charra
- 150 grams of bacon (about 4 slices in squares).
- 150 grams of chorizo.
- 30 grams of pork rinds.
- 100 grams of sausages (about 3 units in squares).
- 100 grams of ham (in squares).
- 1 small onion.
- 1 large clove of garlic.
- 3 tomatoes (in squares).
- 1 serrano or jalapeño chile.
- 1 small bunch of cilantro.
Chicharrón is an optional ingredient, but it adds a new nuance of flavor to the charro beans, so we recommend it.
Preparation of charro beans
Step 1
Preferably let the beans soak for around 10 or 12 hours . Failing that, you can boil them in water for 5 minutes and then let them soak for a couple of hours.
Step 2
The beans are rinsed, washed, drained and transferred to a pot with the water, onion and garlic and left to cook for about 1 and a half hours over medium heat. Then add the salt and let it cook for another 10 minutes.
If the water evaporates during cooking, you must replace it, but heat it first.
Step 3
In a saucepan, fry the bacon over medium-low heat, without adding oil . And once it starts to brown, add the chorizo.
Step 4
When the chorizo is cooked, add the sausages and ham and after cooking for 3 minutes, add the onion and cook until golden.
Step 5
Once the onion changes color, add the garlic and the chopped tomatoes. After the latter begins to release the juice, add the chopped chili.
Step 6
Once the tomato is well cooked , add the beans with a little of the cooking water and let them cook for about 10 minutes.
Step 7
Add the cilantro and, if desired, the chicharrón, stir and taste the seasoning. Finally, let it cook for another 5 minutes and it will be ready to serve.
