Ingredients:
Hot water 200 ml (1 cup)
Hot milk 200 ml (1 cup)
Yeast 10 g (1 tablespoon)
Sugar 2 tablespoons
Egg 1 pc.
Egg white 1 pc.
Salt 1 teaspoon
Flour 650-670 g (add in portions)
Vegetable oil (for greasing the bowl)
Butter (for the pastry)
Egg yolk 1 pc.
1 tablespoon milk (for frosting)
Procedure:
In a bowl, mix the warm water, warm milk, yeast and sugar. Stir until the sugar and yeast have dissolved. Cover and let rest for 15-20 minutes.
Add the salt, egg and egg white. Mix well.
Add the flour gradually, stirring constantly, until you obtain a soft and elastic dough.
Grease a bowl with vegetable oil and transfer the dough. Cover and let rise for 45-50 minutes or until doubled in volume.
Divide the dough into 12 equal parts and shape into balls.
Roll out each ball into a circle 18-20cm in diameter.
Grease each circle with butter and stack them on top of each other in a single stack of 12 circles.
Cover and let rise for a further 35-40 minutes.
Spread the dough on the table, press it lightly with your hands and cut it into 12 parts.
Form the croissants by rolling each part.
Cover and let rise for another 35-40 minutes.
Preheat the oven to 180°C.
Mix the egg yolk with the milk and brush the surface of the croissants.
Bake for 25-30 minutes or until golden brown. Cover with foil or parchment for the final 5 minutes.
