Ingredients for choux pastry:
100 g of butter
125 ml of water
125 ml of milk
0.5 teaspoons of salt
150 g of flour
4 eggs
Ingredients for the cream:
500 ml of 33-36% cream
160 g of icing sugar
150 g of sour cream
Ingredients for decoration:
100 g of chocolate
A little vegetable oil
Method:
Preparation of the choux pastry:
In a saucepan, combine 100g of butter, 125ml of water, 125ml of milk and 0.5 teaspoon of salt and bring to the boil.
Add 150 g of flour and mix vigorously until a homogeneous mixture is obtained.
Put the mixture back on the heat for a few minutes to dry it, stirring constantly.
Allow the dough to cool slightly.
Gradually add the eggs, one at a time, until you reach the desired consistency.
Cooking the cream puffs:
Transfer the dough into a piping bag and form small mounds on a baking tray lined with baking paper.
Bake in a preheated oven at 180°C for 25-30 minutes or until golden brown.
Prepare two trays full of cream puffs and let them cool.
Preparation of the cream:
In a bowl, whip 500ml of cream with 160g of icing sugar until you obtain a fluffy consistency.
Add 150 g of sour cream and mix gently.
Assembling the profiteroles:
Cut the cooled cream puffs in half and fill them with the prepared cream.
Arrange half of the filled profiteroles in a 20cm ring and cover them with half of the remaining cream.
Repeat with the other half of the cream puffs and cream.
Cover and refrigerate for at least 4 hours to allow the cake to stabilize.
Decoration:
Melt 100 g of chocolate and add a little vegetable oil to make it more fluid.
Decorate the cake with melted chocolate.
Note:
The consistency of the choux pastry is crucial; it should be firm enough to hold its shape, but soft enough to expand during cooking.
For the cream, sour cream can be mixed with whipped cream to give a slightly tart flavor that balances the sweetness.
Decorating with melted chocolate adds an elegant touch and a complementary flavor to the profiteroles.
Make sure you let the puffs cool completely before filling them, otherwise the cream may melt.
