Ingredients
4 egg whites
A pinch of salt
4 egg yolks
3 tablespoons of sugar
350-400 g of 10% fat Greek yogurt
3 tablespoons starch (corn or potato)
1 teaspoon baking powder (dough baking powder is probably an error in the text)
Powdered sugar to decorate
Method
Preparation of the egg whites: In a clean, dry bowl, whip 4 egg whites with a pinch of salt until they become frothy and very firm. This will take about 15-20 minutes with an electric mixer on medium-high speed.
Preparation of the egg yolks: In a separate bowl, combine 4 egg yolks with 3 tablespoons of sugar and mix well.
Adding the Yogurt and Starch: Gently incorporate 350-400 g of 10% fat Greek yogurt and 3 tablespoons of starch, mixing until everything is well blended. Be careful not to overwork the mixture.
Yeast: Add 1 teaspoon of baking powder and mix gently.
Combining the Egg Whites: Add the whipped egg whites to the mixture of egg yolks, sugar, yogurt and starch, mixing with delicate movements from bottom to top so as not to dismantle the mixture.
Preparation of the Mold: Line a 16-18 cm mold with baking paper to prevent the cake from sticking.
Cooking: Pour the mixture into the prepared mold and cook in a preheated oven at 170°C for 50 minutes, then lower the temperature to 140°C (284°F) and continue cooking for another 10 minutes.
Cooling: Leave the cake to cool in the oven with the door ajar for 10 minutes before removing it.
Decoration: Once cooled, dust the surface of the cake with icing sugar for a final touch of sweetness and refinement.
Service: Serve this very airy cake for breakfast, as a dessert or for a light and satisfying afternoon break.
