Ingredients:
- 6 medium yellow potatoes
- 2 yellow chili peppers (you can adjust the amount according to your taste)
- 1 large red onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/4 cup vegetable oil
- 2 tablespoons lemon juice
- 1/2 cup mayonnaise
- Salt and pepper to taste
- Fresh parsley leaves to decorate
Instructions:
First, boil the potatoes in salted water until they are cooked but still firm. Then drain them and let them cool.
Meanwhile, remove the seeds and veins from the yellow peppers and chop them finely. If you prefer a spicier dish, you can leave some of the seeds.
In a frying pan, heat the oil over medium heat and add the chopped onion and garlic. Saute them until golden and fragrant.
Add the chopped peppers to the pan and cook for a few more minutes, stirring constantly so they don’t burn.
Remove the pan from the heat and let the mixture cool slightly. Then, add the mayonnaise and lemon juice. Mix all the ingredients well and season with salt and pepper to taste.
Once the potatoes are cool, peel them and cut them in half. With a teaspoon, remove a little pulp from each half to make a small well.
Fill each potato half with the chili and mayonnaise mixture you prepared earlier, making sure to cover each potato well.
Garnish the potatoes with fresh parsley leaves and serve as an appetizer or side.
