Here is a delicious recipe to prepare a zucchini terrine:
Ingredients:
- 3 medium zucchini
- 1 large onion, finely chopped
- 2 cloves garlic, finely chopped
- 200 g grated cheese (you can use Gruyere, Emmental or any other cheese you like)
- 4 eggs
- 1/2 cup of heavy cream (liquid cream)
- 2 tablespoons olive oil
- 2 tablespoons breadcrumbs
- Salt and pepper to taste
- Fresh herbs (optional, such as thyme, basil, or parsley) to garnish
Instructions:
- Preheat the oven to 180°C (350°F). Lightly grease a terrine pan or standard-sized loaf pan and sprinkle with a little breadcrumbs.
- Wash the zucchini and cut them into thin slices.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and cook until translucent and fragrant, about 5 minutes.
- Add the zucchini slices to the pan and sauté everything together for about 7-10 minutes, until the zucchini are tender but still hold their shape. Season with salt and pepper to taste. Remove from heat and let cool slightly.
- In a large bowl, beat the eggs together with the heavy cream. Add the grated cheese and mix well. Add the cooked zucchini and stir until well distributed.
- Pour the mixture into the prepared mold, pressing lightly to compact it. Sprinkle a little more grated cheese on top if you like.
- Bake the terrine in the preheated oven for approximately 35-40 minutes, or until golden brown on top and cooked through in the center.
- Once ready, remove the terrine from the oven and let it rest for a few minutes before removing it from the mold.
- Serve the zucchini terrine hot or at room temperature, decorated with fresh herbs if desired. You can accompany it with a fresh salad and crusty bread.
Enjoy this delicious zucchini terrine as a main dish or as a side dish!
