Baked potatoes stuffed with egg: delicious and easy to prepare

How to make stuffed potatoes

  • Cook the potatoes. Preheat the oven to 375°F and cook the potatoes for about an hour or two until they are tender and the skin is crispy.
  • Trim the tops. Once the potatoes are cooked, let them cool before cutting off the top and scooping out the flesh with a spoon.
  • Stuff the potatoes. Break an egg into each hollowed out potato. Then add the ham, cheese, seasoning and remaining potato pulp.
  • Cook the potatoes again. Put the potatoes back in the oven and cook for about 15-20 minutes until the egg is cooked.

Suggestions

Are you short on time and need to cook potatoes quickly? Cook them in an Instant Pot. For medium potatoes, place 1 cup of water in the bottom of a 6-quart Instant Pot, then place the potatoes on a rack and cook for 16 minutes. Allow pressure to release naturally for 15 minutes.

You can choose to keep the egg whole or scramble it lightly before adding the ham and cheese.

Feel free to swap ingredients based on your taste preferences.

Swap the ham for bacon. Swap cheddar cheese for feta, Swiss or blue cheese.

Add fresh herbs for a pop of green.

How to store stuffed potatoes

Leftovers can be stored in the refrigerator (in an airtight container) for up to 2 days. Heat in the Airfryer for 10 minutes.

Can I prepare stuffed potatoes in the Airfryer?

Yes you can! First cook the potatoes in the Airfryer at 200°C for 30 minutes, until the fork slides easily into the centre.

Fill the potatoes and cook another 15 minutes until cooked through.
