Chocolate cups: the recipe for cups filled with pistachio cream and mascarpone

The chocolate glasses are a real treat, an original and very tasty dessert, ideal for a sweet end to a lunch or dinner with guests. In our version we filled them with a voluptuous pistachio and mascarpone cream but, according to personal taste, you can indulge your imagination while also taking into account the ingredients available at home.

To make them, simply chop the dark chocolate finely with a knife, melt half of it in a bain-marie and then add a spoonful of corn oil and the remaining chocolate flakes to the melted mixture. Once ready, the smooth and shiny sauce obtained is distributed into disposable coffee glasses, taking care to ensure that it adheres well to the walls, the excess chocolate is then poured into a bowl and finally everything is left to harden in the freezer to about 30 minutes. Once the time has passed, simply unmold the cups by delicately removing the plastic wrap and then fill them with the cold cream from the fridge, previously prepared by whipping the fresh cream with the mascarpone and the pistachio spread with an electric whisk .

The result will be refined and delicious finger foods, to be garnished on the surface with  chopped pistachios and a light layer of bitter cocoa powder and then served for a special snack or a party buffet.

For optimal results, when melting the chocolate in a bain-marie , be very careful not to let it come into contact with water : even a few drops would risk making it “go crazy” making it hard and lumpy.

If you like, you can choose a diplomatic cream , a coffee pastry cream or a camy cream for the filling , or you can replace the dark chocolate with white or milk chocolate, as long as it is of excellent quality .

How to prepare chocolate cups
Step 1
Finely chop the dark chocolate with a knife, pour half of it into a bowl and let it melt in a bain-marie1.

Whip with an electric whisk for a minute or until the mixture is soft and creamy, then cover with cling film8and put in the fridge for half an hour: alternatively you can place the cream in the freezer for about ten minutes.

Once the resting time has passed, take the chocolate cups out of the freezer, cut the plastic along the edges with a pair of scissors and delicately remove it9.

Transfer the mascarpone and pistachio cream into a piping bag and fill the resulting chocolate glasses with it10.

The chocolate cups, once filled, should be consumed within a few hours of their preparation. The glasses without filling can be kept in the fridge, in an airtight container, for a maximum of 2 days .
