  1. Heat an iron pan and add the oil. 2. Add the ground meat and let it cook until it is very dry.

Tips for the Perfect Stuffing:

  • Opt for lean ground beef to avoid excess moisture.
  • Add salt only at the end to ensure the meat is loose.

Ingredients for the Dough:

  • 220g rice flour
  • 180g sweet cassava starch
  • 1 teaspoon xanthan gum
  • 2 teaspoons of dry yeast
  • 1 tablespoon demerara sugar (grind in a blender)
  • 1 teaspoon of salt
  • 2 eggs (room temperature)
  • 2 tablespoons olive oil (or vegetable oil)
  • 200 ml of water (adjust as needed)

Dough Preparation:

  1. In a large bowl, mix the rice flour, cassava starch, xanthan gum, yeast, sugar and salt.
  2. Make a well in the center and add the eggs and olive oil, integrating them into the dry mixture.
  3. Gradually add the water, mixing until you obtain a homogeneous dough. Adjust the amount of water as needed to achieve the desired consistency.
  4. Knead the dough until it is smooth and uniform, preparing it to be shaped.

Assembling the Esfihas:

  1. Divide the dough into portions and flatten each one in the palm of your hand, forming a disc.
  2. Add a portion of the meat filling to the center of the disc.
  3. Close the dough, joining the ends and forming a triangle. Make sure the filling is well sealed inside the dough.
  4. Place the esfihas on a greased baking tray, leaving space between them.

To Bake:

  1. Preheat the oven to 180°C.
  2. Brush the surface of the esfihas with a mixture of egg yolk and olive oil.
  3. Bake for 25 minutes or until the sfihas are golden and crispy.
