Roast pork with onions and honey

Ingredients:

1 kg pork roast (from the shoulder or neck)
2 large onions, cut into rings
3 tablespoons honey
2 tablespoons mustard
2 tablespoons olive oil or vegetable oil
Salt and pepper to taste
250 ml broth (vegetable or meat broth)

Directions:

Preheat the oven to 180°C.
Rinse the pork roast and pat dry. Season with salt and pepper.
Heat the oil in a roasting pan and fry the pork roast on all sides until golden brown.
Add the onion rings and fry briefly until soft.

In a small bowl, mix the honey and mustard. Spread this mixture evenly over the pork roast.
Pour in the broth to cover the roast.

Cover the roasting pan and place it in the preheated oven. Let the pork roast simmer for about 2 hours, occasionally pouring the broth over it.

After 2 hours, remove the cover and roast for another 30 minutes until crispy and golden in color.

Remove the pork roast from the oven and let it rest for a few minutes before slicing.
Strain the sauce from the roasting pan and season to taste. This sauce can be poured over the sliced ​​pork roast.

Serve the roast pork with onions and honey hot, ideally with potatoes or dumplings and a vegetable side dish of your choice. Enjoy!
