Ingredients for the base

  • 250 g of 00 flour
  • 113 g of softened butter
  • 300 g of granulated sugar (I only put 230 g)
  • 2 large eggs
  • 1 teaspoon of vanilla extract or vanillin
  • 10-15 g of bitter cocoa (if using liquid colorings, omit it)
  • 240 ml buttermilk *
  • 2 teaspoons of liquid coloring (you can increase or decrease the dose depending on the desired color). If you have gel or powder dye, that’s even better, you’ll need very little.
  • 1 teaspoon of apple cider vinegar or white vinegar
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • Buttermilk is essential in this cake, it can be found in well-stocked supermarkets. Alternatively, you can use 125 ml of skimmed milk and 125 ml of yogurt, mixing the two in a dish with a teaspoon of lemon and waiting about 20 minutes.

Vinegar cannot be replaced, reacting with sodium bicarbonate it has a leavening action. If it is really missing at home or you don’t want to use it, replace it with a sachet of chemical yeast, but it won’t be the same.

Base Procedure

  1. Take the butter out of the refrigerator at least an hour before using it.
  2. In a planetary mixer or with an electric whisk, add the softened butter and beat for at least 5 minutes. Add half the sugar and continue whipping until you obtain a white and frothy cream. Add the rest and mix.
  3. Add the eggs, one at a time, continuing to whisk.
  4. Add vanilla and coloring.
  5. Add the buttermilk alternating with the previously sifted flour and cocoa and whip at low speed creating a homogeneous mixture.
  6. In a small bowl, add the bicarbonate of soda and the vinegar, mix them quickly and when a small foam forms, add them immediately to the mixture. Mix to combine everything.
  7. Add the dough into 2 20cm diameter cake moulds. If you don’t have these molds, you can cook directly in a 22 cm mold, significantly prolonging the cooking time. The important thing is that the mold is high otherwise it comes out. When completely cooled, cut into three identical discs.
  8. Cook at 170°C in a traditional oven for about 30 minutes. Once cooked, remove from the oven and leave to cool completely on a rack.
