Lemon cake with yoghurt in 5 minutes, stays fresh and juicy for days

Ingredients:

3 medium-sized eggs
120 grams of sugar
100 grams of neutral oil such as sunflower oil
100 grams of natural yoghurt, approx. 3.5% fat
100 grams of freshly squeezed lemon juice!
1 tablespoon of grated lemon peel
250 grams of wheat flour
3/4 packet of baking powder
1 pinch of salt

Preparation:

1. First, preheat the oven to 190 degrees top and bottom heat. Grease a small loaf pan and dust with flour.

2. Now beat the eggs with sugar for a few minutes until frothy. Then add the oil with yoghurt, lemon juice, lemon zest and salt. Mix the flour with the baking powder and stir in briefly.

3. Now pour the dough into the prepared tin and bake for about 45-50 minutes. Allow to cool, turn out and decorate with lemon icing as desired (see tip).

Our tip: For the icing, sift about 150g of icing sugar and gradually stir in about 2 tablespoons of lemon juice until smooth, resulting in a thick mixture.
