Ingredients:
500 g sugar
500 g margarine, room temperature
10 eggs, beaten
2 packs of vanilla sugar
1 shot of rum
1,000 g flour
1 litre milk
1 pack of baking powder

Here I’m revealing the waffle recipe we used to make waffles in the cafe where I worked at the time. It’s the best waffle batter recipe I know.
Mix the beaten eggs with the sugar and margarine until smooth and you have a fluffy dough. Add the vanilla sugar and a good shot of real rum. Add 1000 g flour and the baking powder and mix until the dough becomes a little sticky. Finally, gradually stir in the milk and keep stirring until the dough has a smooth and soft consistency.
Bake the waffles in batches in a hot waffle iron and serve hot.
Variation: In winter, stir cinnamon into the dough.
Tips: The amount of dough may be a little too large for a “normal” household. We only use half of everything (except the baking powder), which is enough to feed 6 people if everyone is hungry. Any leftover dough can be frozen.
