Fruit and cream tartlet: colorful and delicious baskets!

Ingredients:

For the tartlet base:

  • 250g of 00 flour
  • 125g cold butter, cut into cubes
  • 100g of icing sugar
  • 1 whole egg
  • Grated lemon zest (optional)
  • A pinch of salt

For the stuffing:

  • 250ml of fresh whipping cream
  • 2 tablespoons of icing sugar
  • 1 teaspoon vanilla extract

For decoration:

  • Fresh fruit to taste (strawberries, blueberries, raspberries, kiwis, peaches, etc.)
  • Gelatin for desserts (optional)
  • Prepare the dough:
    • In a large bowl, sift the flour and add a pinch of salt.
    • Add the cold cubed butter and work it with your fingertips until you obtain a sandy mixture.
    • Add the icing sugar and grated lemon zest (if using).
    • Incorporate the egg and quickly knead the dough until it forms a smooth ball. Wrap it in cling film and place it in the fridge to rest for at least 30 minutes.
  • Form and cook the bases:
    • Preheat the oven to 180°C (about 350°F).
    • Roll out the dough on a lightly floured surface until it is about half a centimeter thick.
    • Cut out circles of dough and line them in tartlet moulds.
    • Prick the bottom of the tartlets with a fork to prevent them from swelling during cooking.
    • Cover the bases with baking paper and fill them with dried legumes or baking weights.
    • Bake for about 10-12 minutes, or until the bases are golden.
    • Let the bases cool completely before filling them.
    • Whip the cream:
      • In a cold bowl, pour the fresh cream and start whipping it with an electric whisk.
      • Add the icing sugar and vanilla extract and continue whipping until stiff whipped cream forms.
    • To assemble the tartlets:
    • Filling in the basics:
      • Fill each tartlet base with whipped cream, using a piping bag for a more precise and decorative result.
    • Decorate with fruit:
      • Decorate the tartlets with fresh fruit as desired, arranging it in a harmonious and colorful way.
      • If you wish, you can brush the fruit with a little dessert gelatin to make it shiny and preserve it better.
    • Serve:
      • Place the tartlets in the refrigerator for at least 30 minutes before serving, so that the cream hardens well.
