Ingredients:
For the Banana Bread:
- 3 ripe bananas
- 100g of granulated sugar
- 50g of cane sugar
- 2 large eggs
- 120ml vegetable oil (or melted butter)
- 1 teaspoon vanilla extract
- 240g of 00 flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 100g chopped walnuts (optional)
For the Cream Cheese Filling:
- 200g cream cheese (Philadelphia type)
- 50g of granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons of 00 flour
- Prepare the Cream Cheese Filling:
- In a bowl, mix the cream cheese, sugar, egg, vanilla extract and flour until smooth. To put aside.
- Prepare the Banana Bread:
- Preheat the oven to 175°C and line a plumcake mold with baking paper or lightly grease it.
- In a large bowl, mash the bananas with a fork until pureed.
- Add the sugars, eggs, oil (or melted butter) and vanilla extract. Mix well until a homogeneous mixture is obtained.
- In another bowl, sift together the flour, baking soda, baking powder, salt and cinnamon (if using).
- Gradually add the dry ingredients to the banana mixture, mixing until well incorporated. If desired, add chopped walnuts and mix gently.
- Assemble the Banana Bread:
- Pour half of the banana bread dough into the prepared pan.
- Spread the cream cheese filling evenly over the dough.
- Pour the other half of the banana bread dough over the cream cheese filling, making sure to cover it completely.
- Cook:
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center of the banana bread comes out clean.
- If the top begins to brown too quickly, cover with foil during the last 15 to 20 minutes of baking.
- Cool and Serve:
- Leave the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Cut into slices and serve.
