Ingredients:
- 200 g dry biscuits (such as digestive biscuits or butter biscuits)
- 100 g of dark chocolate
- 50 g of butter
- 50g grated coconut (plus more coconut for finishing, if desired)
Method:
- Crush the biscuits :
- Start by finely crushing dry biscuits in a food processor or placing them in a food bag and crushing them with a rolling pin until they have a consistency similar to bread crumbs.
- Melt the chocolate and butter :
- Place the chopped dark chocolate and butter in a heatproof bowl. Melt everything in a bain-marie or in the microwave at short intervals, stirring occasionally, until the mixture becomes smooth and homogeneous.
- Combine biscuits and coconut :
- Pour the crushed biscuits into the bowl with the melted chocolate and butter. Also add the grated coconut.
- Mix all the ingredients well until you obtain a homogeneous and compact mixture.
- Shape the truffles :
- With slightly damp hands to prevent the dough from sticking, take small portions of dough and roll them between your hands to form round balls of the desired size.
- Coconut finish :
- If desired, roll newly formed truffles in shredded coconut to coat evenly. This will add an extra pop of flavor and make the truffles more appealing.
- Cooling and storage :
- Place the coconut and chocolate truffles on a tray lined with baking paper and let them cool in the refrigerator for at least 30 minutes, or until firm.
- Suggestions:
- You can customize the truffles by adding other ingredients such as chopped dried fruit, vanilla, rum or flavored liqueur.
- For a more decorative finish, you can also make a melted chocolate glaze and pour it over the truffles before rolling them in shredded coconut.
