Benedetta’s strawberry tacos

Ingredients

Doses for 12 tacos
for the dough
2 eggs
80 g sugar
1 sachet vanillin
0.5 lemons grated zest
45 g sunflower seed oil
60 g 00 flour
35 g corn starch
1 teaspoon baking powder
for the filling
200 ml cream to whip already sweetened
strawberries to taste icing sugar to taste
to decorate

1-To prepare the strawberry tacos, start by separating the yolks from the whites and whip the latter until stiff.

2-We also whip the two egg yolks by adding two tablespoons of boiling water.

3-Add the vanilla and the grated zest of half a lemon.

4-Add the sugar and continue blending.

5-Add the flour, corn starch and yeast together, sifting them.

6-Mix with a spatula until the dough is nice and firm.

7-Now we pour in the sunflower seed oil, continuing to mix.

8-We gradually incorporate the whipped egg whites, mixing delicately from top to bottom. And the dough is ready, which must be a little foamy and very soft.

9-We take a baking tray or baking tray with a sheet of baking paper on top and, using a pencil and glass, draw some circles so as to make the tacos all the same size.

10-Now we turn the baking paper and put the dough inside each circle. Bake at 190°C in a fan oven for about 6-7 minutes, or at 200°C in the static oven for the same time.

11-Once cooked, transfer the tacos to the surface and cut the baking paper into three strips lengthwise.

12-With the help of a cloth we fold the tacos of each strip in half (do this while they are still hot), then blocking the cloth with two clothespins. We repeat for all the strips and let the tacos cool.

13-In the meantime, whip the cream and put it in a piping bag.

14-We fill the tacos by placing a couple of pieces of strawberry, then a nice dollop of whipped cream on top.

15-On top of the cream we place two more pieces of strawberry. We repeat for all tacos.

16-Finally, a nice sprinkling of icing sugar and our strawberry tacos are ready, perfect for a delicious spring snack!
