INGREDIENTS
16 PIECESCAKE
- 50 g of fresh yeast
- 250 ml of warm milk
- 500 g of wheat flour
- 1 egg
- 5 yolks
- 100 g of fine baking sugar or powdered sugar
- 100 g butter
ADDITIONALLY
- approx. 300 g of berries
- yolk + 1 tablespoon of milk (to brush the rolls before baking)
- icing (optional)
PREPARATION
- Remove the yeast from the refrigerator in advance to warm it up. Crumble them and pour them into a cup, add half of the warm milk, 1 teaspoon of sugar and 2 teaspoons of flour. Mix, cover with a cloth and leave for about 10 – 15 minutes in a warm place to rise (the cup can be placed in very warm water to facilitate the development of yeast).
- Beat the egg and yolks with fine sugar until fluffy (kogel mogel). Sift the flour into a large bowl, add the risen yeast, the rest of the warm milk, egg yolks beaten with sugar and melted and cooled butter. Knead the elastic and smooth dough thoroughly (about 15 minutes , until it is no longer sticky). Cover with a cloth and set aside in a warm place to rise for about 1 and 1/2 hours.
- Place the dough on the board, knead for about a minute to remove air bubbles, form a ball and divide it into 16 equal parts. Flatten the first piece of dough in your hands onto the pancake, add 3 teaspoons of blueberries , stick the edges of the dough together carefully, as if for dumplings, being careful not to get any flour in the place where it is stuck together. Then form a neat roll in your hands.
- Place it seam side down on a large baking tray lined with baking paper. Repeat with the rest of the dough. Arrange the buns keeping spaces apart. You will need 2 baking trays, 8 blueberries on one tray. Set aside to rise for about 30 minutes.
- Set the oven to 180 degrees C (top-bottom heating without convection). Brush the top of the blueberries from the first batch with lightly beaten egg yolk and milk, place in the oven and bake for approx. 16 – 18 minutes until golden. The blueberries should be placed in the middle of the oven. Bake the second batch of blueberries. Frost or sprinkle with powdered sugar.
