CAESAR OMELETTE WITH STRAWBERRIES

INGREDIENTS

 2 SERVINGS

  • 1/2 cup of flour
  • 1/2 cup of milk
  • 3 eggs
  • 2 tablespoons of sugar
  • a small pinch of salt
  • 2 tablespoons of butter

TO SERVE

  • icing sugar
  • strawberries + sugar for strawberry mousse
  • optional: blueberries, homogenized cheese

PREPARATION

  • Pour flour into a bowl, add milk and mix with a whisk until smooth. Add egg yolks (keep the whites) and sugar and mix again.
  • Beat the egg whites separately with a small pinch of salt until stiff. Add it to the yolk mixture and mix gently with a spoon.
  • Heat a pan with butter. When the butter starts to sizzle, clarify it (remove the foam). Spread the butter over the entire surface of the pan, pour the mixture onto the omelette and smooth the surface.
  • Fry over low heat for about 5 minutes or until the omelette is nicely browned on the bottom. Then turn it over, but not completely, but turn it over piece by piece – the omelette will tear.
  • After flipping, after about 2 minutes of frying, cut the larger pieces into smaller pieces using, for example, a silicone spatula. Flip the omelette pieces over and fry on the other sides (not too long, until the raw dough sets, about 2 minutes in total).
  • Place on a plate, sprinkle with powdered sugar and strawberry pieces. Mix some strawberries with sugar and use as a strawberry sauce for an omelette. You can also serve with homogenized vanilla cheese.
