Ingredients
for the cake:
– 3 eggs
– A pinch of salt
– 150 g of sugar
– 150 ml of milk
– 150 ml of vegetable oil
– 300 g of flour (type 00)
– 15 g of baking powder
– 100 g of cherries dried
– 1 tablespoon of corn starch
For the cream:
– 1 egg
– 100 g of yogurt
– 1 tablespoon of sugar
– 1 tablespoon of corn starch
For the decoration:
– 50 g of fresh or frozen cherries
– Icing sugar
Procedure
1. Prepare the cake:
– In a bowl, beat 3 eggs with a pinch of salt and 150 g of sugar until the mixture is light and fluffy.
– Add 150 ml of milk and 150 ml of vegetable oil, mixing well.
– Sift 300 g of flour and 15 g of baking powder, then gradually add them to the mixture, mixing until a smooth mixture is obtained.
– In a separate bowl, mix 100g of dried cherries with 1 tablespoon of cornstarch, then gently fold them into the dough.
2. Prepare the cream:
– In a bowl, beat 1 egg with 100 g of yogurt, 1 tablespoon of sugar and 1 tablespoon of corn starch until you obtain a smooth cream.
3. Assemble and bake:
– Pour the cake mixture into a baking pan measuring approximately 28×18 cm, previously buttered and floured.
– Pour the cream over the cake mixture, distributing it evenly.
– Spread 50 g of fresh or frozen cherries over the cream.
– Preheat the oven to 180°C and bake the cake for 40 minutes.
4. Decorate and serve:
– Allow the cake to cool completely before removing it from the pan.
– Dust with icing sugar before serving.
