Step 1
For the biga: mix all the ingredients in a bowl, then cover and leave to rise for at least 16-18 hours.

Soak the raisins in warm water for at least half an hour.

Once the soaking time is over, squeeze the raisins and set them aside.

Combine the flour in a bowl.

Add the biga.
