Ingredients:
For the pork chops:
1 kg (2 lbs) pork chops
5 g (0.2 oz) salt
5 g (0.2 oz) black pepper
50 g diced bacon
50 g of minced garlic
5 g (0.2 oz) lemon zest
5 g (0.2 oz) chili flakes
15 g (0.5 oz) rosemary
2 tablespoons vegetable oil
For the potatoes:
400g potatoes, diced
8 g (0.3 oz) salt
5 g (0.2 oz) black pepper
50 g chopped parsley
100 g grated parmesan cheese
10 g (0.4 oz) garlic powder
20 g onion powder
15 ml (0.5 fl oz) olive oil
500 ml (17 fluid ounces) water
For the lemon and parsley sauce:
30 ml (1 fluid ounce) lemon juice
3 g (0.1 ounce) salt
Preheat the oven to 200°C (400°F).
Season the pork chops with salt and black pepper on both sides.
In a bowl, combine the diced bacon, minced garlic, lemon zest, red pepper flakes, and chopped rosemary. Rub this mixture over the pork chops, making sure they are evenly coated. Marinate for at least 10 minutes.
Heat vegetable oil in a skillet over medium-high heat. Sear pork chops for 2 to 3 minutes on each side until golden brown. Transfer to a baking sheet and bake in the preheated oven for about 20 to 25 minutes or until done.
Meanwhile, prepare the potatoes. In a saucepan, combine the diced potatoes, salt, black pepper, chopped parsley, grated parmesan, garlic powder, onion powder, and olive oil. Pour in the water and bring to a boil. Reduce the heat and simmer until the potatoes are tender and the liquid has reduced, about 15 to 20 minutes.
While the potatoes are cooking, prepare the lemon and parsley sauce by combining the lemon juice, salt and black pepper in a small bowl. Mix well and let rest.
Once the pork chops are cooked, remove them from the oven and let them rest for a few minutes.
Serve the pork chops with the cooked potatoes and drizzle with the lemon and parsley sauce.
