Potato and ham fritters: a quick and tasty dish!

Ingredients:

  • 500 g of potatoes
  • 100 g of cooked ham (or raw ham, depending on your taste), cut into cubes
  • 50g grated cheese (such as Parmigiano Reggiano or Grana Padano)
  • 1 egg
  • 2 tablespoons flour
  • Salt and Pepper To Taste
  • Preparing the potatoes:
    • Peel the potatoes and boil them in salted water until soft.
    • Drain them well and mash them with a potato masher or potato ricer directly into a bowl.
  • Preparation of the dough:
    • Add the diced ham, grated cheese, egg and flour to the mashed potatoes.
    • Mix all the ingredients well until you obtain a smooth mixture.
    • Season with salt and pepper to taste.
  • Forming and cooking the pancakes:
    • Heat plenty of oil in a non-stick pan or deep fryer to about 170-180°C.
    • Using two spoons, form balls of dough (about one or two spoonfuls for each pancake) and gently place them into the hot oil.
    • Lightly press each pancake with the back of the spoon to give it a flatter shape.
    • Fry the potato and ham fritters until golden brown and crispy on both sides, turning them with a spatula to ensure even cooking (about 3-4 minutes per side).
  • Draining and serving:
    • Once ready, drain the fritters on absorbent paper to eliminate excess oil.
  • Service:
    • Serve the potato and ham pancakes hot, perhaps accompanied by a yogurt sauce, flavored mayonnaise, ketchup or barbecue sauce, as desired.
  • These potato and ham fritters are crispy on the outside and soft on the inside, thanks to the combination of potatoes, ham and cheese. They are ideal to enjoy as an appetizer or as a light main course accompanied by a fresh salad. Enjoy!
