INGREDIENTS:
- 500 g of flour;
- 180 g of butter;
- 300 g of ryazhenka;
- 1/3 teaspoon of sodium bicarbonate;
- a pinch of salt;
- powdered sugar – for decoration.
For the filling:
- 200 g of walnuts;
- 200 g of sugar;
- 1 bag of vanilla sugar;
- 50 g of melted butter.
METHOD OF COOKING:
1. Prepare the dough. Place the flour in a large bowl, add the salt and mix.
2. Then pass cold butter through a coarse grater directly into a bowl with flour and mix everything until you get a crumbly dough.
3. Add baking soda to the cream, then add the mixture to the crumbs and knead a soft, non-sticky dough.
4. Cover the dough with cling film and put it in the refrigerator for 1 hour.
5. Prepare the filling. Grind the nuts using a food processor.
6. Mix them with sugar, vanilla sugar and melted butter until smooth.
7. Remove the dough from the refrigerator, divide it into 3 parts, put 2 again in the refrigerator, and process with one.
8. Roll out a piece of dough on a floured work surface into a round sheet (the thinner, the tastier the cookie). Trim the edges to make a large even square. Add the remaining dough to the dough in the refrigerator, roll out again.
9. Cut small squares of 10*10 cm or 8*8 cm, you can 5 cm, but in this case the cookies are very small.
10. Put a teaspoon of filling on each square, spread it over the entire surface and roll it up.
11. Place them on a baking sheet lined with baking paper.
12. Place the tray in an oven heated to 180°C for 20 minutes.
13. Remove the cookies, let them cool completely, then sprinkle them with powdered sugar and you are ready to serve!
Repeat the steps with the dough from the refrigerator. From this amount of ingredients, I got 50-60 biscuits, I cut them into squares measuring 10*10 cm.
