Sometimes in winter, you want to eat a delicious marinated aromatic tomato at the same time, so that the juice and marinade will splash on all sides. And a crunchy sweet and sour cucumber too.
Opening two cans of pickles is costly in all respects. It is not a fact that both banks are consumed in time. And you need to store these decent dishes in the refrigerator, and we don’t have much space there.
What to do? Make such beautiful and very tasty jars in advance, during the harvest season itself!
I share the cooking recipe:
- Wash the vegetables. Soak the cucumbers in cold water for 2-3 hours in advance.
- Wash the cans with a sponge and a brush. First with liquid detergent, then with soda. Cover with boiling water from the inside and sterilize.
- Fill the jars with cucumbers and tomatoes. It is good if the tomatoes are unripe, brown and tight. You can pierce them with a toothpick from the stem side, but this is not necessary. Cucumbers should be picked small, pickling.
- Boil clean water and fill prepared cans with vegetables up to the shoulders with boiling water. About 1 liter of boiling water is used for 3 liter cans.
- Cover with lids or a towel and leave for 15-20 minutes.
- Drain the liquid from the cans, measure how much is left and measure exactly the same amount + 100 ml. This will be a marinade. Add salt and sugar to it, boil.
- Throw peppercorns, coriander and bay leaf into each jar. Pour dry herbs.
- Fill the jars with boiling marinade, pour 1/3 tsp into each jar. citric acid, cover with boiled lids and put to sterilize.
There is no exact time, the reference point is the bubbles. When the first timid bubbles run up from the bottom inside the can, it’s time to take it out of the boiling water and roll it up.
- Screw the jars with screw caps, turn them upside down and wrap them for 12-18 hours.
After the specified time, remove the insulation, turn the jars over, let them cool down for a few more hours, and you can put them away for storage. Good luck with your preparations and a delicious winter!

tomatoes
5-7 peas of black pepper per 1 liter can
2 bay leaves each
0.5 teaspoon each dried dill (oregano, basil, parsley – whatever)
0.5 teaspoon each coriander
Marinade:
1 liter of water
2 Art. l. salt
3 Art. l. sugar
1/3 tsp. citric acid
