65g sugar

Steps to follow to make this recipe:

The first step to start making this coconut pudding recipe is to prepare the liquid caramel. To do this, place the sugar and a little water in a saucepan and heat it until you see it caramelize and acquire that golden tone typical of caramel. We advise you to follow all the steps in the article How to make caramel to avoid burning it. Once it is ready, you must spread it over the bottom and side walls of the mold that you are going to use to prepare the coconut pudding.

The next thing you should do is crush the cookies so that when baking they acquire the compact consistency that they should give to the pudding. You can use different ways to crush the cookies, one option is to do it manually by putting them in a plastic bag and then hitting them with a rolling pin or the mortar mallet. Now, if you want a more comfortable and faster way to do it, it is always possible to use devices such as a mixer, chopper, blender or Thermomix if you have one.

When you have all the cookies well crushed, place them in a glass suitable for the mixer that is quite tall, since all the other ingredients should fit. Add the eggs, grated coconut, condensed milk and milk. The latter can also be of plant origin (soy, rice, oats, etc.) depending on your tastes and preferences. Beat all the ingredients until you obtain a kind of thick cream that will be the perfect dough for the coconut pudding.

Finally, you just have to pour the dough into the mold that you have covered with the liquid caramel and bake it using the bain-marie technique. It’s very simple, preheat the oven to a temperature of 170º for about 10 minutes and then place the pudding mold on a tray or larger container filled with a little water and let it cook for at least 45 minutes.

Coconut pudding is a dessert that is served very cold, so once you remove it from the oven it is important that you let it cool a little at room temperature and then place it in the refrigerator. You should unmold the pudding just before serving it and enjoy it alone or accompanied by other ingredients such as pieces of fruit, whipped cream, nuts…
