Ingredients
2 cups flour
2 cups of sugar
2 teaspoons baking soda
2 teaspoons of cinnamon
1 pinch of salt
1 ½ cup corn oil
4 eggs
3 cups of grated carrot
½ cup chopped walnut
For the bitumen
90 grams of unsalted margarine
1 stick of double cream cheese
450 grams of powdered sugar
1 splash of vanilla
1-Preheat the oven to 180° C.
2-Mix the flour, sugar, baking soda, cinnamon and salt.
3-Add these ingredients to the mixer and, without stopping beating, add the eggs one by one and the oil until integrated.
4-Also add the carrots and beat for 5 more minutes.
5-Add the walnuts and beat lightly. Divide the mixture and pour it onto two previously greased and floured round molds.
6-Bake for 60 minutes or until a toothpick inserted comes out clean.
7-For the frosting, beat the margarine until it reaches a thick consistency, add the double cream cheese with the sugar and vanilla until it becomes a smooth mixture.
8-Unmold the cakes, spread a little frosting on one of them and cover with the other cake. Decorate with the rest of the frosting and walnuts.
