They were prepared both for the everyday table and for festive feasts. However, grated pies in the modern sense appeared only in the 19th century thanks to European cuisine. There are different ways to prepare this type of pie, with a large selection of fillings.
We bake a classic grated cake with jam
Ingredients:
Wheat flour – 400 g;
Salt – a pinch;
Baking powder – 9 g;
Butter – 180 g;
Eggs – 1 pc.;
Sugar sand – 100 g;
Vanilla sugar – 4 g;
Sour cream 25% – 2 tablespoons;
Strawberry jam.
Preparation of grated pie:
Combine flour with salt and baking powder, add cold butter to the mixture. Quickly rub the flour with butter into a creamy crumb with your hands.
As a result, the crumb should gather into a lump when squeezing the palm and fall apart without affecting it. Pour classic and vanilla sugar into a bowl with an egg, add sour cream and mix thoroughly.
We pour the egg mixture into the crumbs, knead the dough, collect it into a lump. Divide the dough into two parts – one larger than the other.
We put most of it in the refrigerator for 1 hour, and the second in the freezer for an hour. Do not forget to put the dough in cellophane bags in advance.
We roll out a large piece of dough on parchment, make an even square layer 6-7 mm thick. Lubricate the layer with jam or jam evenly.
Rub a small piece of dough on a large grater, sprinkle generously on top of the pie. You can make jam islands on the grated layer. Bake the cake at 180 degrees for 20-25 minutes.
After cooking, sprinkle the cake with powdered sugar and let it cool. You can immediately cut the grated cake, so it will turn into small cakes.
