Apricot ice cream is a fresh, creamy and truly irresistible dessert. Just like peach sorbet, it’s perfect for summer, when these sweet, juicy fruits are in full season. To make it at home, without an ice cream maker, you will only need five simple ingredients: ripe, firm apricots, fresh cream, milk, lemon juice and granulated sugar.

The preparation of apricot ice cream is very easy: you will have to heat the milk, cream, sugar and filtered lemon juice in a saucepan, cook everything for 10 minutes and leave to cool completely. The mixture will then be transferred to a mixer, blended for a few minutes until it is foamy and semi-whipped, then transferred to a large, low tray to place in the freezer for 4 hours. Once frozen, the block will be cut into cubes and processed again in the mixer, for a silky and enveloping consistency.

With the same procedure you can make fruit ice cream of the flavor you prefer, such as strawberries, lemon, melon, peaches, but also the chocolate, pistachio and hazelnut version. Using the ice cream maker, the process will be faster and the result smoother, but in our recipe we preferred not to use it and opted for cream, which gives it greater creaminess.

Once ready, apricot ice cream can be enjoyed as a delicious snack, inside homemade waffle cones, or served in refined glass cups as a satisfying end to a meal, garnished with a dollop of whipped cream and a teaspoon of apricot cream.

How to prepare apricot ice cream

Peel the apricots and cut them into pieces 1.
