Lemon cake, light and juicy

Ingredients:

350 g margarine

350 g flour

350 g sugar

1 packet of vanilla sugar

2 teaspoons, heaped baking powder

6 eggs

3 lemons, untreated

300 g icing sugar

Preparation:

Working time approx. 25 minutes

Cooking/baking time approx. 20 minutes

Total time approx. 45 minutes

Preheat the oven to 175 °C – 195 °C top/bottom heat.

First grate the peel of the 3 lemons, squeeze the juice from two of them.

Then beat the eggs and sugar until frothy. Sift the flour and gradually add it with the vanilla sugar, baking powder, lemon peel and margarine. Mix everything well. Spread the dough on a baking tray lined with baking paper. Place in the preheated oven and bake on the middle shelf for about 20 minutes.

Now gradually mix the lemon juice and icing sugar to make a glaze – please use the lemon juice sparingly, the glaze must be nice and thick.

While the cake is still warm, prick it all over with a fork. This will make it nice and moist, as the glaze can seep in. Then quickly spread the glaze on the warm cake and leave to cool
