Champurrado

1 cup corn flour
3 cups hot water
1 cup water
1 cinnamon stick
100 gr piloncillo
1 bar of table chocolate (like Abuelita or Ibarra)
1 can of evaporated milk
1½ cup milk
1 tablespoon Mexican vanilla
Steps
1-Dissolve the corn flour in the 3 cups of hot water. You can blend it with the water or you can also make a dough with your hands, first using only one cup of water and gradually adding the rest.
2-In a good-sized pot, where you can fit at least 3 liters, heat the cup of water together with the cinnamon and the piloncillo and boil over medium-high heat until the piloncillo melts. You can help the process by stirring occasionally with a wooden spoon.
3-When about half of the piloncillo has melted, add the chocolate bar so it melts there too.
4-Once the piloncillo and chocolate are melted, add the evaporated milk and milk and stir using a whisk or chocolate grinder.
5-Beat the chocolate until it looks well incorporated and foamy. Let it heat for a few minutes.
6-Add the vanilla and the already diluted corn flour. Let it heat until it reaches the desired thickness.
7-Serve hot and enjoy
