Ingredients:
8 bone-in, skin-on chicken thighs
Salt and pepper to taste
1 tablespoon olive oil
1 cup diced pineapple
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup honey
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes (optional)
Chopped chives for garnish
Directions:
Preheat oven to 400°F (200°C). Season chicken thighs with salt and pepper.
In a large skillet over medium-high heat, heat olive oil. Add chicken thighs, skin side down, and cook until golden and crispy, about 5-7 minutes per side. Transfer chicken to a baking dish.
In a medium bowl, mix together the pineapple, soy sauce, ketchup, honey, garlic, ginger, sesame oil, and red pepper flakes.
Pour the pineapple mixture over the chicken thighs in the baking dish.
Bake for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly.
