Fried potatoes with egg and cheese

Ingredients:
3 cloves of garlic, chopped
some cheese, sliced ​​or grated
3 tablespoons clarified butter, or vegetable oil that can be heated to high temperatures
5 medium-sized potatoes
1 medium-sized onion, cut into half rings
eggs as desired
paprika powder
salt and pepper

Preparation:

  1. First peel the potatoes and cut them into slices or cubes about 7 mm thick.
    Then heat the pan, a cast-iron pan is best, to about 70% of the maximum power and leave it like that until the end.
  2. Add the clarified butter or oil to the pan and let it heat up. Then add the potatoes to the pan and turn them frequently. Only add the onions when the potatoes have taken on a noticeable color on all sides.

When they are well fried, add the garlic, stir and then sprinkle the cheese over them and add the eggs in the middle, tossing to spread it out a bit. Season with plenty of paprika, pepper and salt. Stir briefly again until the egg has set.
