
Ingredients:
2 large cucumbers, thinly sliced
1 carrot, julienned or grated
1 red pepper, thinly sliced
1/4 cup red onion, thinly sliced
1/4 cup chopped fresh cilantro
2 tablespoons of sesame seeds
1/4 cup rice vinegar
2 tablespoons of soy sauce
1 tablespoon of sesame oil
1 tablespoon of honey or maple syrup
1 clove of garlic, chopped
1/2 teaspoon grated fresh ginger
Pinch of red pepper flakes (optional)
Salt and black pepper, to taste
Instructions:
In a large bowl, combine the cucumber slices, julienned carrot, sliced red pepper, red onion and chopped cilantro.
In another bowl, whisk together rice vinegar, soy sauce, sesame oil, honey or maple syrup, minced garlic, grated ginger, red pepper flakes (if using) , salt and black pepper. This will be your dressing room.
Pour the vinaigrette over the vegetable mixture and toss to coat all the ingredients.
Sprinkle sesame seeds over the salad and toss again gently.
Let the salad sit for about 10 to 15 minutes before serving. This will allow the flavors to meld and the vegetables to marinate in the dressing.
