Chicken and cheese flautas: delicious recipe

Ingredients for pico de gallo

  • 1 cup of chopped tomatoes.
  • ¼ cup chopped white onion.
  • ¼ cup chopped cilantro.
  • 1 teaspoon chopped serrano chili, seeds removed.
  • 1 teaspoon lemon juice.
  • 1 teaspoon salt.
  • 1 teaspoon black pepper.

Ingredients for the flutes

  • 1 ½ cup + 1 tablespoon cooking oil (separately ) .
  • ¼ cup chopped onion.
  • 1 teaspoon minced garlic.
  • 1 ¼ cup shredded chicken.
  • 1 teaspoon salt.
  • 2 cups of grated cheese.
  • 1 teaspoon black pepper.
  • 10 corn tortillas.
  • ¾ sour cream.
  • Shredded fresh cheese ( optional ).
  • Guacamole ( optional ).

Step 1

Use a medium bowl for the pico de gallo and mix the tomatoes, serrano pepper, cilantro, onion, lemon juice, salt and pepper. Reserve.

Heat 1 tablespoon oil in a medium skillet over medium heat for 2 minutes. Add the onion and sauté for 1 minute, then add the garlic and sauté for 30 seconds.

Add the shredded chicken along with the diced tomato, salt and pepper; Cook for 2 minutes and set aside .

In a small bowl, combine cheese, chicken and cumin; mix it all up.

Heat ½ cup oil in a medium skillet over medium heat for 3 minutes. Fry the flautas until golden and crispy, for approximately 4-6 minutes or until the filling is hot and the tortillas are well toasted, turning occasionally.

Transfer the fried flautas to a plate lined with absorbent paper, avoiding touching them for a few minutes ( so that the steam does not soften them ). When they are cool enough, remove the toothpicks.

Serve the flautas with about 2 tablespoons of sour cream, 3 tablespoons fresh cheese, 3 tablespoons of pico de gallo and 2 tablespoons of guacamole.
