Ingredients to prepare this exquisite baked stuffed chicken. An ideal recipe for the holidays! Super tasty
- 1 chicken of approximately 2 kg
- Olive oil
- Salt and pepper
- 2 cloves of garlic and rosemary
- 1 glass of white wine
- 1/2 kg of high quality minced meat
- 1 medium onion
- 1 clove garlic
- A handful of pistachios (or 50 g of olives for those allergic to nuts)
- A handful of dried apricots
- A handful of dried cranberries
- 1 medium egg
- Bread crumbs
Procedure
- Debone the chicken, either by doing it yourself or by asking the butcher for help.
- Season the boneless chicken with salt, pepper, garlic and rosemary, and set aside.
- Finely chop the onion and garlic, cook in a pan with oil and salt until tender, then set aside.
- Finely chop the ham and/or bacon.
- In a large bowl, mix the minced meat with salt and pepper, add the chopped ham and/or bacon, then add the beaten egg and continue mixing.
- Add cranberries, dried apricots and pistachios (or olives) to the meat mixture and mix well.
- Add the cooked and tempered onion and garlic to the meat.
- Add breadcrumbs to obtain a compact filling.
- Stuff the chicken evenly and compactly.
- Preheat the oven to 200°C.
- Crush the garlic with rosemary and add a little olive oil.
- Spread the stuffed chicken with the crushed rosemary garlic and tie it with an elastic kitchen mesh.
- Place the chicken on a tray, add the garlic, rosemary and oil mixture, and optionally a little white wine.
- Bake at 180°C for approximately 1 hour 30 minutes.
- Halfway through cooking, add the rest of the white wine. If necessary, cover with aluminum foil to prevent drying.
- At the end of cooking, let the chicken rest for about 30 minutes, remove the mesh and it will be ready to cut and enjoy.
- To accompany, reduce the roast juices in a saucepan, strain and, if you want it thicker, add a little cornstarch dissolved in water.
