How to make triple crispy puff pastry

Ingredients

For the mass:

  • 250g flour
  • 50g butter ointment
  • 1 teaspoon (3g) salt
  • 1 tablespoon (10g) 
  • 120ml ice water
  • 120g butter (for puff pastry)

For the filling:

  • Sweet strawberry
  • chocolate candy

Before baking:

  • Egg brushing (2 tablespoons of egg + 2 tablespoons of milk)

Preparation

  1. Leave the butter ready to pomade.
  2. In a bowl, combine the flour with the butter.
  3. I added the ice water, salt and sugar. Mix well until everything is integrated.
  4. Knead for a few minutes and then let it rest, covered by a towel, for about 15 minutes.
  5. Separate the dough into four equal parts, giving them a square shape.
  6. Stretch each part to about 30cm x 25cm.
  7. I spread pomaded butter over the stretched dough.
  8. Fold it into three parts and sprinkle with flour.
  9. Stretch again and fold in three again. I repeated two more times.
  10. Cut the edges to neaten and then divide into 12 portions.
  11. Make diagonal cuts in each piece.
  12. Brush a portion with the egg and milk mixture, and add the candy of your choice.
  13. Place another portion on top and press lightly.
  14. Brush the top.
  15. Bake at 200°C for 10 minutes. Then reduce to 180°C and cook for 20 more minutes, although the time may vary.
  16. Once cooked, let it cool and that’s it.

Tips: Although it may seem complicated, the puff pastry technique is a matter of practice. Don’t be discouraged if it doesn’t turn out perfect the first few times. Experiment with different fillings and find your favorite combination.
