Ingredients
For the pancakes:
- 3 medium potatoes
- 1 egg
- Oregano to taste
- ¼ chopped white onion
- Salt to taste
- 1 can of drained tuna
- 1 cup breadcrumbs
- ½ cup chopped cilantro
For the green sauce:
- ¼ cup olive oil
- 1 tbsp apple cider vinegar
- Juice of 1 lemon
- ½ bunch of cilantro
- Spicy green chili peppers to taste (you can use green chili or green bell pepper to soften)
- ¾ of white onion
- 2 coats
Preparation
- Pancakes: Cook the potatoes in salted water until tender. Once cooked, peel them and make a puree. To this puree add the chopped onion, tuna, egg, oregano, cilantro and salt to taste. Mix everything until you obtain a homogeneous mass.
- Take portions of the mixture and form into pancakes. Pass them through the breadcrumbs making sure they are well covered.
- In a frying pan with a little hot oil, fry the pancakes until golden brown on both sides. Booking.
- Green sauce: In a blender or processor, place the avocados, cilantro, chili peppers, onion, lemon juice, apple cider vinegar and olive oil. Process until you obtain a creamy sauce. If necessary, adjust salt and pepper to taste.
I served the tuna pancakes hot accompanied by the green sauce and enjoy a combination of flavors that will surprise you. This recipe is perfect for a light meal but full of flavor. Do not miss it!
Tips
- Make sure the tuna is well drained so the pancakes don’t fall apart.
- If you like spicy, you can add more green chili to the sauce.
- Serve with a fresh salad for a complete meal.
