Christmas Truffles Without Sugar, Without Oven, Without Flour, Without Eggs

Ingredients:

  • 200 g low-fat stevia-based cookies
  • 75 g of walnuts
  • 3 teaspoons of bitter cocoa
  • 250 g unsweetened dark chocolate
  • 100 ml of milk
  • 50 g unsweetened dark chocolate
  • 90 g of sugar-free white chocolate
  • 2 tablespoons of vegetable oil

Instructions:

  1. Grind the cookies and nuts in a food processor until you obtain a fine mixture.
  2. Add the bitter cocoa and mix well.
  3. Heat the milk until it is almost boiling and pour it over the unsweetened dark chocolate. Stir until smooth.
  4. Add the chocolate mixture to the crushed cookies and nuts. Mix until all ingredients are well combined.
  5. Form small balls with the mixture and place them on a tray lined with parchment paper.
  6. Melt the unsweetened dark chocolate and the unsweetened white chocolate separately with a tablespoon of vegetable oil each, in the microwave or in a double boiler.
  7. Dip the truffles in the dark chocolate and place them back on the tray.
  8. Decorate some truffles by dipping them in the melted white chocolate.
  9. Refrigerate the truffles for at least an hour so the chocolate hardens.
