Dough  :
400g flour,
25g fresh yeast or 1 packet of dry yeast
125g milk,
60g butter,
40g sugar,
1 egg.
Dough:
100g ground walnuts (I always use walnuts, but hazelnuts or almonds work well too great)
100g of sugar
100g of breadcrumbs,
1 teaspoon of cocoa,pinch of cinnamon,possibly
1 rum flavoring, if desired
300ml of milk.
Prepare a yeast dough with the dough ingredients and let it rise for an hour…In this time prepare the feeling.Mix all the dry ingredients well in a bowl and pour the boiling milk over them.Mix well…Roll out the dough into a rectangle, spread evenly and roll. Cut the roll in half lengthwise with a sharp knife and interlace the two parts. Cover and let rise for another 30 minutes…(The longer the better)…Place a heatproof bowl with water at the bottom of the oven and preheat the oven to 180°C…Bake the cake for about 30-40 minutes until golden on top…if necessary, test with a chopstick.I then take about 100 g of icing sugar and mix it with 1 to 2 tablespoons of water, brush on the hot cake and let it cool well.
