Ingredients for Coconut Cake:
4 eggs
A pinch of salt
100 g sugar (add gradually)
100 g of flour
7 g of baking powder
7 g of vanilla sugar
40g butter, melted
30 g of coconut flakes
20cm shape
Procedure for Coconut Cake:
Preheat the oven to 180°C.
In a bowl, beat the eggs with a pinch of salt until frothy.
Gradually add the sugar, continuing to mix.
Sift the flour, baking powder and vanilla sugar over the egg mixture and mix gently.
Add the melted butter and coconut flakes and mix until the ingredients are well incorporated.
Pour the mixture into a 20cm cake tin and bake in a preheated oven for around 40 minutes, or until the cake is golden and cooked.
Once cooked, let the cake cool before serving.
Ingredients for Banana Cake with White Chocolate Cream:
2 eggs
100 g of sugar
40 g of corn starch
500 ml of milk
70 g of white chocolate
70 g of butter
1 banana
1 tablespoon of rum
Procedure for Banana Cake with White Chocolate Cream:
In a bowl, beat the eggs with the sugar until you obtain a frothy mixture.
Add the cornstarch and mix well.
Heat the milk in a saucepan and gradually add it to the egg and sugar mixture, stirring constantly.
Transfer the mixture to the pan and cook over medium-low heat until the cream thickens.
Add the white chocolate and butter and stir until the chocolate is completely melted.
Let the cream cool.
Assembly and Decoration:
Divide each cake in half horizontally.
Spread the white chocolate cream on the base of one half of the banana cake and place the other half on top.
Do the same with the coconut cake.
Place both cakes in the refrigerator for 2-3 hours.
Before serving, decorate both cakes with coconut flakes.
