Ingredients:
Fruit (Mango, Grapes, Oranges, Strawberries), peeled and cut into small pieces
1 tablespoon agar agar powder (9 g) or gelatin
1/2 cup sugar (100 g)
1/4 cup water (50 ml)
3/4 cup milk (175 ml)
1 1/4 cups plain yogurt (350 g)
Instructions:
Cut the fruit (mango, grapes, oranges, strawberries) into small pieces and set aside.
In a saucepan, mix the agar agar powder (or gelatin), sugar and water. Bring to the boil over medium heat, then reduce the heat to low and simmer for a couple of minutes, stirring occasionally until the sugar has completely dissolved.
Add the milk to the pot and mix well. Cook over low heat for another 2 minutes, stirring continuously.
Remove the pan from the heat and let the mixture cool slightly.
Add the plain yogurt to the cooled mixture and mix well until the mixture is smooth.
Arrange the fruit pieces in the bottom of a 6-7 inch (15-18 cm) baking dish.
Pour the yogurt mixture over the fruit in the pan, making sure it is evenly distributed.
Place the pan in the refrigerator and let the mousse cool for at least 2-3 hours, or until it solidifies.
Once the fruit mousse has cooled and solidified, it is ready to be served.
Decorate with additional pieces of fresh fruit, if desired, before serving.
