Ingredients:
200 ml of warm water.
7 g dry yeast (2 teaspoons).
2 tablespoons of sugar.
110 ml vegetable oil.
1 egg.
110 ml of yogurt.
1 teaspoon of salt.
600 – 650 g of type 00 soft wheat flour (to be added in parts).
3 teaspoons of sugar.
1 teaspoon of cinnamon.
1 egg yolk.
1 tablespoon of milk.
50 g of butter.
150 g of cream cheese.
2.5 tablespoons of icing sugar.
Procedure:
In a bowl, mix warm water, dry yeast, sugar, vegetable oil, egg, yogurt and salt. Mix until all ingredients are dissolved.
Gradually add the flour (600 – 650 g in total) and mix well with a spatula. Knead the dough on the table for 4-5 minutes until it is smooth and does not stick to your hands.
Grease a bowl with vegetable oil, place the dough in the bowl and let it rise for 45-50 minutes.
Divide the dough into two equal parts, roll them into two balls and cover with a towel, leaving to rest for 10 minutes.
Roll out each ball into a 30×40 cm rectangle.
Brush the dough with softened butter, fold the dough into an envelope and repeat the process twice. Cover the dough and let it rest for 25-30 minutes.
Roll out the dough again into a 30×40 cm rectangle.
Sprinkle with a mixture of sugar (3 teaspoons) and cinnamon (1 teaspoon).
Cut the dough into strips 2.5-3 cm wide and rotate them.
Arrange the strips in a 20cm baking dish.
Repeat the process with the second ball of dough, creating a second variation of sweet cannoli.
Cover the pan and let the cinnamons rise for 25-30 minutes.
Preheat the oven to 180°C and cook for 28-30 minutes.
Meanwhile, prepare the butter cream: mix butter, cream cheese and icing sugar with a mixer for 3-4 minutes.
After cooking, spread the hot cream on the cinnamon rolls.
Serve the freshly baked Cinnabons and enjoy!
